ÀϹÝÀç¹è ´õ´öÀ» 4°¡Áö Á¶°ÇÀ¸·Î 15ÀÏ È¤Àº 30Àϰ£ ÀúÀåÇÏ¸é¼ ºÐ¼®ÇÑ Èֹ߼º Çâ±â¼ººÐµé Áß 1-hexadecene, 2,6-dimethyl-2-octanol, 2-methyl-2-dodecanol, ${alpha}$-cedrene, ${eta}$-selinene, farnesane, isoledeneµî 7Á¾ÀÌ ¸ðµç ÀúÀåÁ¶°Ç¿¡¼ È®ÀεǾú´Ù. ±×·¯³ª °¢ ÀúÀåÁ¶°Ç¿¡¼ ³ªÅ¸³ª´Â 10°³ÀÇ Áß¿ä Çâ±â ¼ººÐµéÀ» ºñ±³ÇÑ °á°ú ¸ðµç ÀúÀåÁ¶°Ç ¹× ÀúÀå±âÀÏ¿¡¼ °øÅëÀûÀ¸·Î ³ªÅ¸³ ¼ººÐÀº ¾ø¾úÀ¸¸ç, trans-2-hexen-1-olÀÌ $19.8%{sim}56.0%$, ¸¶´ëÆ÷Àå ÈÄ ½Ç¿ÂÀúÀå ´õ´öÀ» Á¦¿ÜÇÑ 1-hexanolÀÌ $51.9%{sim}71.1%$¸¦ Â÷ÁöÇÏ´Â ÁÖ¿ä ¼ººÐÀ̾ú´Ù. ¸¶´ëÆ÷Àå ½Ç¿ÂÀúÀå ´õ´öÀÇ °æ¿ì¿¡´Â cyclohexanolÀÌ 36.4%, trans-2-hexen-1-olÀÌ 19.8%¸¦ Â÷ÁöÇÏ¿´°í, 2-hexenalÀÌ 12.7%·Î ³ô°Ô ³ªÅ¸³µ´Ù. ¶ÇÇÑ ¸ðµç ÀúÀåÁ¶°Ç¿¡¼ È®ÀεǾú´ø 1-hexadecene, 2,6-dimethyl-2-octanol, 2-methyl-2-dodecanol, ${eta}$-selinene, farnesane, isoledeneµéÀº Á¶¼ººñÀ²ÀÌ ¸Å¿ì ³·°Å³ª ¼øÀ§¿¡ Æ÷ÇÔµÇÁö ¸øÇÏ´Â °ÍµéÀÌ ´ëºÎºÐÀ̾ú´Ù. ´õ´ö Çâ±â¼ººÐ¿¡ ´ëÇÑ °ü´ÉÆò°¡·Î ´õ´öÀÇ Ç°ÁúÀ» ÆÇ´ÜÇÑ´Ù¸é Ç×±ÕÆ÷Àå ³ÃÀåÀúÀå ´õ´öÀÌ ¸ðµç ÇâÃë°¡ ³ô¾ÒÀ¸¸ç, ±× ´ÙÀ½ÀÌ ¸¶´ëÆ÷Àå ³ÃÀåÀúÀå, Ç×±ÕÆ÷Àå ½Ç¿ÂÀúÀå, ¸¶´ëÆ÷Àå ½Ç¿ÂÀúÀå ¼øÀ¸·Î ÇâÃë°¡ °¨¼ÒÇÏ¿´´Ù. ÀÌ´Â Æ÷ÀåÀçÀÇ Â÷À̺¸´Ù´Â Àú¿Âº¸°ü ¿©ºÎ°¡ ÁÖ¿ä º¯ÀÎÀ¸·Î ÀÛ¿ëÇÑ´Ù°í ÇÒ ¼ö ÀÖ´Ù. °á·ÐÀûÀ¸·Î ´õ´ö °íÀ¯ÀÇ ÇâÃë¿¡ ´ëÇÑ °ü´ÉÆò°¡¸¦ ÅëÇØ ÀúÀå´õ´öÀÇ »óǰ°¡Ä¡¸¦ ÆÇ´ÜÇÒ ¼ö ÀÖ´Â ±âÁØÀÌ ¸¶·ÃµÉ ¼ö ÀÖÀ» °ÍÀ¸·Î ±â´ëµÈ´Ù. |

| We investigated the changes in the volatile flavor components of domesticated Codonopsis lanceolata, which were packed in woven polypropylene (WP) film or low density polyethylene (LDPE) film and stored for 15 and 30 days at refrigerated ($2{sim}4^{circ}C$) or room ($18{sim}20^{circ}C$) temperature (hereafter referred to as WP-RE-15, WP-RO-15, LDPE-RE-15, LDPE-RO-15, WP-RE-30, WP-RO-30, LDPE-RE-30 and LDPE-RO-30). 167 volatile flavor components were identified in the fresh domesticated Codonopsis lanceolata by GC/MS. The volatile flavor components which were identified in the domesticated Codonopsis lanceolata stored for 15 days were as follows ; LDPE-RE (117 components), WP-RO (65 components), WP-RE (49 components), and LDPE-RO (48 components). After 30 days, the numbers of components were as follows : LDPE-RE (99 components), WP-RO (94 components), WP-RE (46 components), and LDPE-RO (85 components). In all conditions, the following 7 volatile flavor components were identified; 1-hexadecene, 2,6-dimethyl-2-octanol, 2-methyl-2-dodecanol, ${alpha}$-cedrene, ${eta}-selinene$, farnesane, and isoledene. According to the sensory evaluation, the freshness of domesticated Codonopsis lanceolata was best maintained with LDPE film and under chilled conditions. |
